Four stages, one mountain, no shortcuts.

01 — MARCH

Spring feed

A light, minimal sugar feed — enough to carry the colony through the last cold weeks. Nothing more. It's a survival ration, not a diet.

02 — MAY

Wild forage

Once the mountain flowers open, the feeding stops. The bees range across roughly 18 varieties of wild thyme, astragalus and endemic highland plants Hüseyin has watched bloom his whole life.

03 — JULY

Capping

The bees seal each cell with wax once the honey is ready — the sign that it's finished on their terms, not a harvest deadline.

04 — AUGUST

Harvest

Whole capped frames are cut, not spun. What you receive is the comb exactly as the hive built it — nothing extracted, filtered, or blended.

The Carniolan colony forages freely across Yastık's wild highlands.

Most commercial honey operations feed sugar syrup right through the season. Hüseyin does the opposite: feed only when the bees would otherwise struggle, then step back and let a Carniolan colony forage widely, patiently, across a mountainside most producers never reach.

The mountainside itself is unusually diverse — Hüseyin has counted roughly 18 different wild thyme varieties alone growing across the slopes, alongside astragalus and endemic highland flowers, which is what gives this honey its layered, changeable character from batch to batch.

He doesn't do it alone. His wife, Kadriye Dinç, works the hives beside him every season in Yastık.
